Second Club Dinner

The Executive Chef Stéphane Hestin and the Pastry Chef Fabian Nguyen of the Hotel Ritz presented a sophisticated menu with the necessary touch of cocoa and chocolate, accompanied by an exquisite selection of wines.

 "Brands of Gourmet Chocolate"

Various brands of gourmet chocolate marketed by El Corte Inglês were brought to the Club, and provided further tasting of two of these brands.

"The Portuguese Discoveries through the eyes of an agronomist"

Speech delivered by Prof. José E. Mendes Ferrão, retired from the Instituto Superior de Agronomia de Lisboa - Tropical Cultures.

Godiva Chocolatier”

The history of this brand and its current collection of chocolates were made known by Manuela Costa, representative of the brand in Portugal. Tasting of bonbons

"Chocolate and Malt Whiskey"

The Single Malt Club was represented by Luís Garcia, who familiarized the members present with the main features of Malt Scotch.  Edgardo Pacheco, journalist for the magazine Sábado, accepted the challenge and expressed his thoughts on the combination between a selection of malt whiskeys and bonbons from the brand Godiva Chocolatier.

A speciality brought to us by “Chocolataria Alex” situated in Leiria, presented by Master Chocolatier Alex who is the store owner.

"Production Methods for the Óbidos Bonbons"

Vítor Nunes, Technical Director of the Óbidos International Chocolate Festival, introduced his own bonbon and gave us a delightful savouring.

"The benefits of eating chocolate, containing a minimum of 70% cocoa paste, once a day"

The nutritionist Dr. Gil Vaillant explained the nutritional benefits of chocolate in the daily diet.

"Bonbons Tasting"

Victor Nunes provided a tasting of two of his creations, Rose Bonbon and Mint and Cinnamon Truffle, which was combined with a 10 year Tawny Port from Taylor's.

"The Best Chocolate Cake in the World"

Carlos Brás Lopes, owner of Cozinhomania, and member of the club, presented his famous chocolate cake, which was eaten with a Port LBV from 2000, also from Taylor's.

"The Aromas of Chocolate", an exhibition produced by the Cocoa Club of Portugal was also shown at this session, as well as a presentation on the chocolate brand Valrhona.

Patrick Mignot, representative of Valrhona in Portugal, provided the club's members with a presentation on this exceptional brand of chocolate at the Quinta do Monte D'Oiro, owned by Eng º. José Bento dos Santos.

In addition to a full presentation about the brand, there was a further possibility to try  a number of chocolate desserts created by Chef Yann Duytsche the École du Grand Chocolat Valrhona.

São Tomé e Príncipe - Food Hygiene and Sustainable Development

At the invitation of the Centro de Investigação Agronomis Tropical/ Cooperação e Desenvolvimento (CIAT) e (DAIAT), the club participated at this event with the president of the Club, Odete Estêvão, providing a tasting of chocolates from different brands made in S. Tomé e Príncipe.

The Transformations of Cocoa

Date: March 2006

Location: Escola Secundária de Carcavelos

The Club was invited by the School Council, on Science Day, to explain the process of transformation that cocoa undergoes until the manufacturing of chocolate. A PowerPoint presentation was prepared by Cassilda Alves entitled "From Fruit to Chocolate".

In order to alert the students of a healthy diet, where chocolate is a part of it, the benefits of this food were explained while the students were taught how to properly melt chocolate.

4th Session - Club's 1 year Anniversary

"From Cocoa to Chocolate" - Addressing the different stages in the process of turning cocoa into chocolate, lecture given by Prof. Dra. Helena Almeida, from the Instituto Superior de Agronomia de Lisboa.

"What is a bonbon? What type of bonbons exist?" - An interesting multimedia presentation on the different types of bonbons, its possible toppings and fillings, by Odete Estevão, President of the Club.

"How to make bonbons, Molds and Techniques" -  António Melgão, of Pastelaria Capri in Montemor-o-Novo, demonstrated how to make delicious bonbons.

"A combination of Bonbon with Wine" - A tasting of various bonbons with selected wines, presented by Teresa Gomes, of Wine Solutions.

"Presentation of a range of cocoa and chocolate's from the brand Cacao Barry"

Exotic dessert prepared by Chef Elias da Silva from Hotel Cascais Miragem.

Chocolate Party

Under the program "Chocolate Party" organized by the School, the Cocoa Club of Portugal was invited to participate in this initiative, promoting an open conference to all students and teachers interested. The theme was "From Fruit to Chocolate" and the speakers were Prof. Dra. Helena Almeida, of the Instituto Superior de Agronomia of Lisbon, and President of the Club, Odete Estêvão.

Workshop - Chocolate

Location: Cozinhas Vaqueiro

The first workshop conducted by the Cocoa Club of Portugal at the “Academia dos Sabores – Vaqueiro”, was open to members as well as the general public. Participants were taught the initial techniques on how to prepare recipes with cocoa and chocolates.
